Directions:
Dough:
Mix butter, flour and salt as you would for a pie crust, cutting butter into the dry ingredients. A food processor can be used. Then mix in sour cream. Cover with plastic wrap and refrigerate several hours or overnight. Remove from refrigerator and let come to room temperature. Roll out dough on floured surface into a 10x15-inch rectangle.
Filling:
Pre-heat oven to 350 degrees. Spread preserves on the rolled out dough. Sprinkle with coconut and almonds. Roll up lengthwise, like a jelly roll, 15 inches long. Place on a foil-lined baking sheet. Bake for about 1 hour. Remove from oven. Let cool for about 10 minutes. Then cut in 1 1/2 inch slices and sprinkle with confectioners sugar. Yields 10 slices.
