Dried Cherry Applesauce Quick Bread

Ingredients:

  • 1 cup applesauce
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 cup Chukar® Dried Tart Cherries
  • 1/2 cup chopped walnuts

    Directions:

    Pre-heat oven to 325 degrees. Grease and line with wax paper two loaf pans (7 1/2 x 3 1/2-inches). In a small saucepan heat applesauce just to a simmer. Remove from heat. Sift together flour, baking soda, salt, cinnamon, nutmeg and ground cloves. In a large bowl of electric mixer, cream butter and sugar until light. Add egg and beat until blended. Alternately beat in half of the flour then half the applesauce, then beat in remaining flour and applesauce. Fold in dried cherries and walnuts. Spoon into prepared pans. Bake 50 minutes to 1 hour or until toothpick comes out clean from the center of the bread. Cool in pan for 10 minutes, then remove from pan and cool completely on rack. Wrap each loaf separately in foil until ready to serve. Yield: 2 bread loaves.

    This bread is best served the next day. It freezes well also. You get 2 bread loaves for the effort of one.
