Place dried cherries in a small bowl and top with the red wine. Allow cherries to plump for 15 minutes. In a large bowl, combine lettuces, cherries and onion. Add oil and toss until coated. Combine vinegar, lemon juice, mustard, honey and pepper; add to salad and mix well. Stir in wine-soaked dried cherries, sprinkle a bit of kosher salt and toss well. Spoon onto salad or dinner plates and top with crumbled cheese. Yields 4 to 6 servings. |
