Lemon Orzo with Dried Berries
Ingredients:
1 1/2 cups uncooked orzo (rice shaped pasta)Low fat chicken broth1/4 cup butter1/3 cup onions, chopped2 tablespoons freshly grated lemon peel1/2 teaspoon kosher salt1/8 teaspoon black pepper1/4 teaspoon ground coriander1/4 cup hazelnuts or almonds, toasted, skins removed and chopped1/2 cup Chukar® Dried Cranberries or Blueberries2 tablespoons frech parsley, chopped

Directions:
Cook orzo in chicken broth (instead of water) according to package directions. Drain well. Melt butter and saute onions until transparent. Remove from heat and add lemon juice, grated lemon peel, salt, pepper, and coriander. Toss drained orzo with seasoned butter and onions, parsley, chopped nuts, and dried berries/cherries.
