Lemon Orzo with Dried Berries

  • 1 1/2 cups uncooked orzo (rice shaped pasta)
  • Low fat chicken broth
  • 1/4 cup butter
  • 1/3 cup onions, chopped
  • 2 tablespoons freshly grated lemon peel
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon ground coriander
  • 1/4 cup hazelnuts or almonds,  toasted, skins removed and chopped
  • 1/2 cup Dried Cranberries or Blueberries
  • 2 tablespoons frech parsley, chopped


Cook orzo in chicken broth (instead of water) according to package directions. Drain well. Melt butter and saute onions until transparent. Remove from heat and add lemon juice, grated lemon peel, salt, pepper, and coriander. Toss drained orzo with seasoned butter and onions, parsley, chopped nuts, and dried berries/cherries.
