Cranberry Oatmeal Cookies
Ingredients:
1 cup Chukar® Dried Cranberries, chopped1/2 cup granulated sugar2 large eggs1 1/2 teaspoons vanilla3/4 teaspoon salt3/4 teaspoon cinnamon3/4 teaspoon baking soda1 cup vegetable shortening1 1/2 cups brown sugar, packed1 1/2 tablespoons freshly grated orange peel1 3/4 cups all-purpose flour3 cups rolled oats4 tablespoons hot water

Directions:
Soak dried cranberries in 1/2 cup water for 10 minutes. Drain well. Cream shortening with the granulated and brown sugar until light and fluffy. Beat in the egg, vanilla and orange peel until combined well. Sift together the flour, salt, baking soda and cinnamon. Blend well. Combine the rolled oats and hot water. Stir in the cranberries and oats. Drop by rounded tablespoons onto lightly greased baking sheets. Bake in preheated 350 degree oven for 12-15 minutes, or until the edges are golden. Approximately 36 cookies.
