Peach-Cherry Pie

  • 2 cups Chukar® Dried Cherries
  • 3 cups peaches, skinned, pitted and sliced
  • 3 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 tablespoon butter
  • Pie crust
  • 3 cups flour
  • 1 1/4 cups shortening
  • 1 teaspoon salt
  • 1 egg
  • 4-6 tablespoons cold water
  • 1 tablespoon vinegar

Pie Crust

Mix flour and salt in a large bowl. Cut shortening into flour until small particles form. Beat egg, water and vinegar in a small bowl. Add to flour and rapidly mix with a fork until a ball of dough forms. Flour hands when handling the dough and use a light touch to divide the dough. Shape into two flattened circles. Use a rolling pin to roll out the dough on a floured surface (a sheet of wax paper sprinkled with flour works well). Roll out a 12' circle. Transfer it to the pie pan.

Pie Filling

Soak cherries in water for 20 minutes. Combine first seven ingredients in a medium mixing bowl. Pour into unbaked pastry-lined pan. Dot with butter. Cover with top crust and make slits for steam to escape during baking. Optional: roll out top pastry and cut into 3/4'' strips to make a lattice pie crust.
