Arroz Doce (Sweet Cherry Rice Pudding) Recipe courtesy of Chef Frank Magana of Picazo 7Seventeen
Ingredients:
4 cup water1/2 teaspoon salt1.25 cup rice2 cup milk1/2 teaspoon lemon zest1/2 cinnamon stick3 egg yolks1/2 teaspoon ground cinnamon, for garnish1/2 cup Chukar® Dried Rainier Cherries1/2 cup Late Harvest Riesling

Directions:
Soak cherries in Late Harvest Riesling. Fill pot with water and salt and bring to a boil. Add rice and let cook for 8 minutes, then drain. Meanwhile, bring milk to a boil in a separate pot with the cinnamon stick and lemon zest.
As milk comes to a boil add cooked rice. Cook for 4-5 minutes, until rice begins to soften. Add sugar, cherries and ice wine, stir well. Remove from heat and egg yolks, mix quickly.
Place sweet rice into large serving dish and garnish with ground cinnamon and Chukar Rainer Cherries.
