Arroz Doce (Sweet Cherry Rice Pudding)
  • 4 cup water
  • 1/2 teaspoon salt
  • 1.25 cup rice
  • 2 cup milk
  • 1/2 teaspoon lemon zest
  • 1/2 cinnamon stick
  • 3 egg yolks
  • 1/2 teaspoon ground cinnamon, for garnish
  • 1/2 cup Chukar® Dried Rainier Cherries
  • 1/2 cup Late Harvest Riesling

Soak cherries in Late Harvest Riesling. Fill pot with water and salt and bring to a boil. Add rice and let cook for 8 minutes, then drain. Meanwhile, bring milk to a boil in a separate pot with the cinnamon stick and lemon zest.

As milk comes to a boil add cooked rice. Cook for 4-5 minutes, until rice begins to soften. Add sugar, cherries and ice wine, stir well. Remove from heat and egg yolks, mix quickly.

Place sweet rice into large serving dish and garnish with ground cinnamon and Chukar Rainer Cherries.
