Chukar Cherry Stuffed Pork Chops

Ingredients:
  • 1 medium apple, peeled, cored and diced
  • 1 small onion, chopped
  • 1/2 cup Chukar® Dried Bing Cherries
  • 1/2 cup dry Riesling
  • 1 teaspoon salt
  • 2 cup fresh bread crumbs
  • 1/4 teaspoon pepper
  • 1/4 teaspoon fresh thyme
  • 3 teaspoon melted butter
  • 6 thick pork chops (bone-in)
  • 3 tablespoon olive oil

Directions:
Start by soaking Bing Cherries in Riesling wine. Preheat oven to 350' F.

In a medium saute pan, over low heat apples, onions in melted butter until soft. Add bread crumbs, thyme, cherries-wine, salt and pepper. Add water if mixture appears too dry. Cut a deep pocket into the side of each pork chop and stuff with the cherry-apple dressing. Secure with a toothpick. Season pork chops with salt & pepper.

In large skillet, brown the stuffed chops on each side in the olive oil. Place chops in shallow ovenproof casserole and arrange the remaining dressing around the chops. Roast for about 25 minutes in oven or until internal temperature reaches 150' F.
Serves 4-6 people.
