Chukar Cherry Stuffed Pork Chops Recipe courtesy of Chef Frank Magana of Picazo 7Seventeen
Ingredients:
1 medium apple, peeled, cored and diced1 small onion, chopped1/2 cup Chukar® Dried Bing Cherries1/2 cup dry Riesling1 teaspoon salt2 cup fresh bread crumbs1/4 teaspoon pepper1/4 teaspoon fresh thyme3 teaspoon melted butter6 thick pork chops (bone-in)3 tablespoon olive oil

Directions:
Start by soaking Bing Cherries in Riesling wine. Preheat oven to 350' F.
In a medium saute pan, over low heat apples, onions in melted butter until soft. Add bread crumbs, thyme, cherries-wine, salt and pepper. Add water if mixture appears too dry. Cut a deep pocket into the side of each pork chop and stuff with the cherry-apple dressing. Secure with a toothpick. Season pork chops with salt & pepper.
In large skillet, brown the stuffed chops on each side in the olive oil. Place chops in shallow ovenproof casserole and arrange the remaining dressing around the chops. Roast for about 25 minutes in oven or until internal temperature reaches 150' F.
Serves 4-6 people.
