Holiday Stuffing
Ingredients:
6 Ounces Chukar® Dried Tart Cherries1 cup Madeira14-slices of day-old homemade style white bread, toasted and torn into small pieces (about 8 cups)1 1/2 cups toasted pecan Meats1 cup onion, chopped1 cup celery, chopped1/2 cup shallots, chopped1/2 cup sweet butter3 crisp apples, coarsely chopped1/2 cup golden raisins1/2 cup flat-leafed parsley, chopped2 teaspoons dried tarragon, crumbled1 teaspoon dried thyme10-12 dried sage leaves, crumbled1 teaspoon salt, or to taste1 teaspoon freshly ground pepper, or to taste

Directions:
Place dried cherries in a bowl with the Madeira and soak for several hours or overnight. Combine the bread pieces with toasted pecans in a large bowl. Drain the cherries, reserving the Madeira and add them to the bread mixture. In a skillet, sauté onion, celery and shallots in the butter until the vegetables are softened. Add this to the bread mixture. Add the apples, raisins, parsley, tarragon, thyme, sage, salt, pepper and reserved Madeira and toss the stuffing well.
