Cranberry Pound Cake

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 cup sour cream
  • 1 1/2 cups Chukar® Dried Cranberries
  • 2 1/2 cups flour
  • 1/2 teaspoon baking powder


Preheat oven to 350 degrees. Lightly grease an 8 ½ x 4 ¼ x 2 inch loaf pan. Using an electric mixer, beat butter and sugar together in a medium mixing bowl, until light and fluffy. Ad eggs, vanilla and sour cream, mixing thorough. Mix in dried cranberries. Combine flour and baking powder in a separate bowl. Gradually add to cranberry mixture, mixing well. Pour batter into prepared pan. Bake for 1 hour 15 minutes or until a toothpick inserted into the center of cake comes out clean. Remove from pan; let cool completely on a wire rack. Makes 1 loaf.
