Cherry Wine (sweet or savory) Sauce

Ingredients:

  • 1/2 bottle Northwest Regional wine
  • 1 handful Chukar Dried Bing Cherries  or Cherry Medley

    Directions:

    This wine reduction sauce with naturally dried Chukar brand cherries is easy to make, versatile and very gourmet.

    Take a good quality bottle of a regional red wine and pour half of the bottle into a sauce pan. Throw in a handful of Chukar brand Dried Bing Cherries or Cherry Medley. Bring to a boil and reduce temp to a simmer. Continue simmering until wine reduces by half and cherries plump up and lose their wrinkles.


    To make a Savory Sauce: Add a pinch of sugar, a tablespoon of butter and stir. Cherry Wine Savory Sauce elevates rice, quinoa or couscous and is delicious alongside sauteed poultry, duck or pork. Garnished with fresh rosemary.


    To make a Dessert Sauce: Stir in a tablespoon of butter and 1/4 cup sugar or more to taste. Cherry Wine Dessert Sauce is luxurious spooned over baked apples, poached pears, fine vanilla ice cream or buttery pound cake.
