Rack of Lamb with Chukar Cherry BBQ Chipotle Sauce
  • 2 Frenched Racks of Lamb
  • 1 cup Cabernet Wine
  • 1/2 cup Dried Cherries
  • 2 tablespoon Chipotle Chiles Sauce (can)
  • 1 tablespoon Garlic (chopped)
  • 1 tablespoon Dijon Mustard
  • 2 tablespoon Olive Oil
  • Kosher Salt
  • 1 jar Chukar Cherries BBQ Sauce

Split both racks into double chops. Make the marinate-mix garlic, chipotle, mustard, wine and olive oil, add dried cherries. Pour over lamb and marinate for a minimum of 4 hours.

Fire up the grill. When ready to cook the chops, season each side with kosher salt.

Grill the chops for about 1 to 2 minutes, and then turn. Brush with Chukar Cherry BBQ Chipotle Sauce and cook 2 to 3 minutes more for a medium-rare.
