Directions:
Preheat oven to 400 degrees. Cream sugar and butter, add eggs and beat until fluffy. Sift together salt, flour, baking soda. Mix together all wet and dry ingredients
alternately. Using processor, chop dried cherries with zest. Add to batter, spoon into buttered tins and bake 12 minutes or until golden. Rest in pans, brush with juice and
sprinkle with sugar. Cool and remove. To assemble: Slice muffin in half and make sandwich appetizers using preserves and turkey. Yields: 40 appetizers.
