Cherry Seared Lamb Chops
Ingredients:
4 each Ellensburg Lamb Loin Chops, Cut 1 inch Thick
2 tablespoon extra virgin olive or grape seed oil
1/2 cup Chukar® Cherry Chipotle BBQ Sauce
Kosher salt and pepper to taste.

Directions:
Preheat oven to 400 degrees. Wipe meat dry and add salt, pepper. Heat saute pan on high heat, add oil, place chops in bottom of pan and sear 2 or 3 minutes until browned. Turn and repeat. When sides are seared, cover with cherry sauce and place in preheated oven until medium-rare. Use meat thermometer and do not overcook. Remove from oven, rest 10 minutes and serve. Yield: 4 servings.
Note: Recipe is applicable to pork chops, chicken breast and beef brisket.
