Directions:
Place Chukar® dried cherries and
wine in saucepan, heat to a boil,
reduce heat and simmer 10
minutes. Remove plumped
cherries from liquid and set aside.
Continue to simmer liquid until
reduced to half a cup. Add sugar
to a heated saute pan, stirring
until caramelized. When sugar is
caramelized, add red wine and
vinegar. Caution: Liquid may
spatter. Add additional vinegar to
reach a full half cup. Continue to
gently scrape pans bottom until
mixture is syrupy with strong
sweet and sour flavors.
Suggested Use: Top poached
pears, apples, poultry, pork or
halibut.
