Roasted Chicken with Vegetables
Ingredients:
1 each Chicken
2 tablespoon Chukar® Curried Cherry Chutney
2 tablespoon Olive Oil
1 tablespoon Butter
1 each Yellow Squash-remove flesh, cut into chunks
1 each Sweet Onion-cut into 1/4 inch slices or quarters
4-6 each Roma Tomatoes-whole, medium
1 each Garlic cloves, optional
Thyme
Rosemary
Kosher Salt and Fresh Ground Pepper

Directions:
Preheat oven to 380 degrees. Cut off extra fat and fatty skin from chicken. Brush 1 T. olive oil on exterior and inside cavity. Rub chutney in cavity and on exterior. Sprinkle exterior and inside cavity with thyme, rosemary and kosher salt. Place in oven and bake approx. 1.5 hours or until leg pulls off easily. Meanwhile, cut and mix veggies will 1 T. olive oil, dot with butter and place in foil-lined baking pan next to chicken. Bake one hour, turning veggies several times.
