Directions:
Preheat oven to 350 degrees. Place foil cups on baking sheet with a vanilla wafer flat side up in each cup. Set aside. Mix together until smooth; softened cream cheese, sugar, eggs and extract. Spoon into baking cups. Insert 1/2 teaspoon fruit preserve or filling in each center. Bake 16 to 18 minutes until set. Cool and refrigerate. When ready to serve, top each cheesecake with 1 tsp. of preserve or filling.
