Thumbprint Cookies

  • 2/3 cup butter
  • 1 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 2 each eggs, separated
  • 1 teaspoon vanilla extract
  • 1 cup pecans or walnuts, finely chopped
  • 1 each 8 oz bag Chukar Chocolate Cherries


Preheat oven to 375. In a medium bowl, whip butter to soft; add sugar, egg yolks, vanilla, and half the flour. Mix thoroughly. Add remaining flour, mix well, cover and chill for 1 hour. Grease cookie sheets and lightly beat egg whites. Form 1 inch balls of dough, roll in egg whites then in nuts, and place on cookie sheet. Indent each cookie with your thumb. Bake for 12 minutes, remove and cool. Fill centers with any Chukar chocolate cherries, chocolate berries, or your favorite preserve.
