Citrus Cherry Salad
  • 1/3 cup fresh squeezed citrus juice
  • 4 ounce Chukar Dried Cherries
  • 1 each small bunch green leaf lettuce
  • 1 each small bunch watercress
  • 1 each small red pepper, sliced
  • 1 each medium Asian pear, cored and sliced
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • 4 each small tangerine
  •  OR
  • 2 each large navel oranges, peeled and segmented
  •  kosher salt and ground pepper, to taste

In small bowl, squeeze 1/3 cup citrus juice and discard pulp. Add dried cherries to juice and soak for 10 minutes. Drain cherries reserving juice. Prepare vinaigrette dressing: combine reserved juice, oil, vinegar, salt and pepper. Wash greens, dry, tear, and place in large salad bowl. Add segmented oranges, red pepper, and pears to greens and toss well. Add vinaigrette dressing, plate and enjoy!
