Directions:
Soak dried cherries in apple juice or water at least 10 minutes. Drain well. Pre-heat oven to 400 degrees. Line 12 muffin cups with paper liners. In a large bowl, mix rolled oats, flour, sugar, baking powder, soda and salt. Measure milk in 2-cup glass measuring cup; add applesauce, egg and oil and stir with a fork. Add liquids all at once to flour mixture, mixing just until you have a soft dough. Stir in dried cherries. Spoon batter into muffin cups coated with cooking spray. Bake until golden brown, about 20 to 25 minutes. Yields 12 muffins.
