Cherry Ricotta Pancakes (continued)
Soak dried cherries in apple juice or water at least 10 minutes. Drain well before using. In a medium bowl, whisk together egg, ricotta, milk and oil. Stir in lemon rind, pancake mix and dried cherries just until blended. Pour by scant 1/4 cupfuls onto hot nonstick griddle or skillet. Turn when pancakes have bubbles on top and are golden brown underneath. Yields 12 to 14 pancakes.
