Cherry Sour Cream Muffins
  • 2 cups all purpose flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1 large whole egg
  • 1 large egg yolk
  • 1 cup sour cream or plain nonfat yogurt
  • 2 tablespoons milk
  • 3/4 stick unsalted butter, melted and cooled
  • 1 teaspoon vanilla
  • 1 cup Chukar® Dried Cherries, any variety
  • 1/4 cup coarsely chopped walnuts or hazelnuts

Cherry Sour Cream Muffins (continued)
Pre-heat oven to 400 degrees. In a bowl sift together flour, sugar, baking powder, baking soda, and salt. In separate bowl whisk together whole egg, yolk, sour cream, milk, melted butter, and vanilla. Make a well in the flour mixture, add the egg mixture, and stir batter with a fork until it is just combined. Chop the dried cherries. Stir in dried cherries and walnuts (batter should be lightly lumpy). Divide the batter among well buttered muffin tins. Bake for 12-15 minutes. Turn onto racks and let cool. Yields 12 muffins.
