Tart Cherry Vinaigrette

  • 1/2 cup Chukar® Dried Tart Cherries
  • 1/2 cup white wine vinegar
  • 1 shallot, finely minced
  • 1/2 cup + 1 tablespoon extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon dijon-style mustard
  • Dash salt


Soak dried cherries in wine vinegar. Saute shallot in 1 tablespoon oil until soft. Combine both mixtures together and let stand 15 minutes. In another bowl, combine 1/2 cup olive oil, lemon juice, mustard and salt. Slowly combine mixtures and drizzle over salad.
