Fruit Salad with Cherry Vinaigrette
Ingredients:
1 cup Chukar® Dried Cherries, any variety1 small Granny Smith apple, thinly sliced1 small orange, peeled and cut into sections1/4 cup whole salted cashews1 1/2 cups Belgian endiveSpinach and Bostin lettuceSalad greens3 tablespoons vegetable oil1/4 teaspoon salt1/4 teaspoon ground black pepper

Directions:
Whisk together vinegar, oil, salt and pepper. Arrange greens on serving plate. Add dried cherries, fruits and cashews. Serve with vinaigrette dressing. Yields 4 to 5 servings.
