Festive Holiday Salad
  • 1 head radicchio
  • 4 big handfuls baby lettuce mix
  • 1 tablespoon champagne vinegar
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon chopped fresh cilantro
  • 1 teaspoon grated lemon zest
  • 6 tablespoons olive oil
  • 1 cup Chukar® Dried Tart Cherries
  • Coarse kosher salt and freshly ground pepper to taste

Tear the radicchio into pieces and place in a large bowl with the lettuces. Whisk together the remaining ingredients. Just before serving, pour the vinaigrette over the salad and toss gently. Serves 6.
