Spicy Cherry Catsup
Ingredients:
1/2 cup Chukar® Dried Cherries, any variety1/4 cup tomato paste1/4 cup red wine vinegar2 jalapeno peppers, seeded and chopped1 tablespoon sugarSalt and pepper

Directions:
Soak 1/2 cup dried cherries in apple juice or water at least 10 minutes. Drain well. Place dried cherries, tomato paste, wine vinegar, jalapeno peppers, sugar, salt and pepper in a blender or food processor. Puree until fairly smooth. In a sauce pan, heat mixture to a boil, then cover and simmer for about 20 minutes, stirring frequently. Serve with Chicken-Kumquat Skewers.
