Baked Apple-Cherry Stuffing

  • 13 slices of whole grain bread, cut in 1/2 inch cubes
  • 1 1/2 cups onions, chopped
  • 1 1/2 cups celery (3 stalks), chopped
  • 3 tablespoons olive oil
  • 3 cups apples (about 3 medium), coarsely shredded
  • 1 cup Chukar® Dried Cherries, any variety
  • 1/4 cup snipped parsley
  • 1 teaspoon ground cinnamon
  • 1 cup chicken broth


Pre-heat oven to 300 degrees. Arrange bread in shallow pan; toast in oven for 10-12 minutes or until crisp, stirring twice. In a large skillet, cook onion and celery in oil about 5 minutes, or until tender. In an extra-large bowl, combine bread cubes, vegetables, apples, dried cherries, parsley and cinnamon. Add enough broth to moisten. Toss to mix. Spoon stuffing into a 2 1/2 quart casserole dish. Bake, covered, for 45 to 50 minutes or until hot. Serves 12 to 14. Serve with ham or pork roast.
