Cherry Pecan Couscous
Ingredients:
2 teaspoons olive oil2 teaspoons butter1/2 cup large onion, diced10 ounces instant couscous2 cups vegetable or chicken broth1/2 cup Chukar® Dried Cherries, any variety1/2 cup broken pecans1/2 cup cilantro, washed and finely chopped1/4 cup green onions, very finely choppedSalt and pepper

Directions:
Heat oil and butter in a non-stick saucepan. Saute onions with a pinch of salt until onions are translucent. Add couscous and vegetable broth, bring to a boil, stir once, cover and remove from heat. Let stand 5 minutes. Fluff couscous and add dried cherries, pecans, cilantro, and green onions. Add salt and pepper to taste. Cover for a few minutes and serve. Serves 4-5.
