Cherry Chocolate Chip CookiesIngredients:

Directions: Pre-heat oven to 350 degrees. Soak dried cherries in apple juice or water at least 10 minutes. Drain well. In large mixing bowl, beat together brown sugar, sugar and shortening until light and fluffy. Beat in eggs, vanilla and orange rind. Combine flour, baking soda, cinnamon, salt and rolled oats. Stir half into sugar mixture, beating well. Add hot water and remaining flour-oat mixture. Mix in drained, chopped cherries and chocolate chips. Drop by rounded tablespoons onto greased baking sheets. Bake for 12 to 15 minutes, or until edges are golden brown. Yields about 3 dozen 3 1/2 inch cookies. Contains: |
