Knapsack Cookies

  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup butter
  • 1/4 cup shortening
  • 1/2 cup peanut butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1 cup quick rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup Chukar® Dried Tart Cherries
  • 1/2 cup mini M&M's
  • 1/2 cup peanuts or sunflower seeds


Pre-heat oven to 375 degrees. Beat sugars, butter, shortening, peanut butter, egg and vanilla with mixer in large bowl until well blended. Stir in flour, oats, baking powder and baking soda thoroughly. Stir in dried cherries, candies and nuts. Drop cookie dough by tablespoonfuls about 2 inches apart on un-greased baking sheets. Flatten each slightly. Bake about 10 minutes, or just until cookies are set and begin to brown. Cool a few minutes before removing from baking sheet. Yields about 3 dozen cookies.
