Directions:
Pour apple brandy over apple slices in a small bowl. Let stand for at least 30 minutes. Pre-heat oven to 375 degrees. Melt 1 teaspoon butter in each of two 4-inch tart pans in oven while it is heating. Arrange apple slices in circles equally between tart pans. There may be more than one layer. Remember the apple layer is what you will see when tart is inverted. Sprinkle each with 1 teaspoon sugar and 1 teaspoon lemon juice. Cut two 4 1/2 inch circles from the unfolded pastry sheet. Bake rest separately for other use. Place pastry circles over apple slices, carefully tucking the pastry around inside of tart pans. Bake until golden brown, about 18 minutes. Immediately place two dessert plates over tart pans and carefully invert to unmold tart and fruit. If any apple slices stick to pan, remove and put back on tart. Serve warm. Yields 2 tarts.
These tarts can be made ahead. Reheat in a 350 F oven for 8-10 minutes before serving.
