Cherry Almond Macaroons
Ingredients:
1/4 cup Chukar® Dried Tart Cherries5 ounces almonds1 ounce almonds3 egg whites1 cup sugar, divided

Directions:
Cover dried cherries with boiling water and let stand until softened. Drain and chop into 1/4 inch pieces. Toast nuts in a 350 degree oven for 5-7 minutes or until lightly toasted. Cool and finely grate. Put egg whites in a bowl and stir in all but 1 tablespoon of the sugar. Stir in grated nuts (the mixture should hold a shape). Add chopped dried cherries. Make teaspoon size mounds on a buttered, floured baking sheet and sprinkle very lightly with the remaining sugar. Bake at 325 degrees until lightly browned, about 20-25 minutes. Makes 3 dozen macaroons.
