Cherry Hazelnut Beer Cake
Ingredients:
1 cup Scottish Ale2 cups Chukar® Dried Bing Cherries, any variety1 cup toasted hazelnuts, chopped1 cup light brown sugar, packed1/3 cup butter1/2 teaspoon cinnamon1/2 teaspoon ground cloves1/2 teaspoon salt1/8 teaspoon nutmeg2 cups cake flour1 teaspoon baking powder1 teaspoon baking soda

Directions:
Cover dried cherries with hot water in bowl and let stand 10 minutes or until softened. Drain well. Combine ale, dried cherries, sugar, butter, cinnamon, cloves, salt and nutmeg in large pot and simmer 3 minutes stirring constantly. Cool. Sift cake flour. Sift again adding baking soda and baking powder. Stir batter until smooth. Stir in hazelnuts. Grease and flour loaf pan. Bake at 325 degrees for 1 hour, 15 minutes. Optional: Serve with
Cherry Rum Sauce.
