Northwest Dried Cherry Oatmeal Energy Bars

Directions:
In small bowl, cover dried cherries with hot water and let stand 10 minutes or until softened. Drain well. In large bowl, combine oats and dried cherries; set aside. In large heavy saucepan, melt butter over low heat. Stir in sugar, salt, lemon zest, corn syrup and vanilla; bring to a boil over medium heat, stirring frequently. Remove from heat and stir in oat mixture. Turn into 13x9 inch baking pan; press mixture to from an even layer. Bake at 350 degrees for 20 minutes. Cut into bars while still warm. Makes 21 bars.
