Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 cup milk
- 1/4 cup applesauce
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup Chukar® Sour Cherry Preserves
- 1 cup sliced almonds
- Turbinado sugar, for garnish
Method
- Preheat oven to 400° F.
- In a medium mixing bowl, stir together all ingredients except Chukar® Sour Cherry Preserves, sliced almonds, and turbinado sugar. Mix well.
- Fold in 1/2 cup sliced almonds, being careful not to over mix.
- Spoon batter into well-greased muffin tins, filling the cups 1/2 full.
- Spoon a teaspoon of Chukar® Sour Cherry Preserves into the center of each muffin cup, then spoon more muffin batter on top so the cups are about 2/3 full.
- Sprinkle sliced almonds and a pinch of turbinado sugar evenly over the muffins.
- Bake for 18-20 minutes or until golden.
