Cherry Chipotle Lamb Chops

An elegant entree for entertaining.


  • 8 grass-fed lamb chops, ½ inch thick
  • 4 Tbsp extra-virgin olive oil
  • 4 Tbsp fresh rosemary leaves
  • 2 fresh garlic cloves, minced
  • 1 tsp kosher or sea salt
  • 1 tsp fresh ground black pepper
  • ⅔ cup Chukar® Cherry Chipotle Sauce
  • 5 long organic carrots, cut lengthwise into slices that are ¼ inch thick by 2 inches long
  • ½ a sweet onion, cut into ¼ inch thick slices
  • ½ cup Chukar® Cherry Pepper Jelly, warmed
  • Garnish: fresh mint sprig
  • Directions

  • Place Chukar® Cherry Chipotle Sauce in saucepan and warm on low.
  • Prepare sliced vegetables: Brush veggies with olive oil and sprinkle with kosher salt and pepper.
  • Turn the oven to broil. If using grill or smoker turn to high—425°F. Brush both sides of lamb with olive oil, combine seasonings and press onto the chops. Place vegetables on outside edges of pan and place chops in the center of pan.
  • If using oven, cook chops for 5-6 minutes per side. If using grill or smoker, place on grill and cook until temperature reads 145°F (medium rare). Note: watch veggies throughout cooking time and remove from oven if they begin to burn.
  • Transfer lamb to a platter and let rest for 5 minutes. Brush tops with warmed Chukar® Cherry Chipotle Sauce. Serve on individual plates with vegetables and a dollop of warmed Chukar® Cherry Pepper Jelly alongside.
