Prepare sliced vegetables: Brush veggies with olive oil and sprinkle with kosher salt and pepper.
Turn the oven to broil. If using grill or smoker turn to high—425°F. Brush both sides of lamb with olive oil, combine seasonings and press onto the chops. Place vegetables on outside edges of pan and place chops in the center of pan.
If using oven, cook chops for 5-6 minutes per side. If using grill or smoker, place on grill and cook until temperature reads 145°F (medium rare). Note: watch veggies throughout cooking time and remove from oven if they begin to burn.
