Sweetheart Mashed Potatoes with Creamy Cherry Gravy

Easy 30 minutes Serves 4-6
These sweet and creamy mashed potatoes are sure to be a hit with any main dish. Try them with our Spiced Beef Roast with Balsamic Cranberry Cherry Chutney!


  1. For the Mash
  1. 3-4 large white sweet potatoes or white russet potatoes
  2. 2 Tbs butter
  3. 2 Tbs heavy cream
  4. 4 cloves of garlic, pressed
  5. 1 egg
  6. 2 chives/green onions, chopped
  7. Salt and pepper

  1. For the Gravy
  1. ½ cup red wine
  2. ½ cup beef broth (or half of broth from Spiced Beef Roast)
  3. ½ cup of Chukar® Sweet or Sour Cherry Preserves
  4. leaves from 2 sprigs of thyme
  5. ¼- ½ cup heavy cream


  1. For the Mash
  1. Cut raw potatoes into cubes, place in a pot and fill with water so the potatoes are completely covered.
  1. Boil potatoes until a fork can easily pierce through them. Immediately drain potatoes and transfer to a bowl to mash by hand or use a mixer.
  1. Add butter and egg while potatoes are hot and mash to your desired consistency. It is important to do this step quickly while the potatoes are hot so the butter will melt and the egg will cook.
  1. After the egg and butter are added, whip the cream and garlic into the potatoes. Stir in chives and salt and pepper to taste.

  1. For the Gravy
  1. Add wine to a pan with Chukar® Sweet or Sour Cherry Preserves and let the alcohol cook out.
  1. Add the broth from the roast and sprigs of thyme.
  1. Bring to a boil and remove from heat. If creamy, slightly sweeter gravy is desired, add heavy whipping cream and let thicken on low for five minutes.
  1. Serve with potatoes.
