Savory Cherry Wine Sauce

Ingredients
- 1 bottle Chukar® Columbia Valley Red Wine Blend
- 4 ounces Chukar® Bing Cherries
- 1 tablespoon sugar
- 1 tablespoon unsalted butter
- Kosher salt
- Fresh ground pepper
Directions
- Pour wine into a medium saucepan. Add Chukar® Bing Cherries.
- Bring to a boil and lower temperature to a steady simmer. Simmer liquid until the volume reduces by half.
- Add sugar, butter, a pinch of kosher salt, and fresh ground pepper to taste. Stir.
- Suggested Use: spoon over roast chicken, duck, pork loin, or fish prior to serving. It's divine with our Halibut a la Chukar.
- Optional: Finish with a twig of rosemary or parsley.
