Cherry Lemon Bars

Ingredients
- Crust
- 1 ½ Cups pastry flour
- ¾ tsp salt
- 6 Tbsp powdered sugar
- ¾ Cup cold butter, cut into 1" pieces
- Filling
- 2 Cups sugar
- ¼ Cup flour
- 4 eggs
- juice of 3 large lemons
- 1 jar Chukar® Cherry Pie Filling
Directions
Make the Crust
Stir together the flour, salt, and powdered sugar.
Using a fork, cut in the butter until you have a crumbly mixture. Press the entire mixture firmly into a greased 9" x 13" glass baking dish and bake at 350°F for 15 minutes. Remove from oven.
Make the Filling
In a bowl, stir together sugar & flour.
In another bowl, beat eggs until well-combined. Beat in the sugar & flour mixture until sugar dissolves. Add lemon juice and mix well.
Bake
Carefully pour the custard mixture evenly over the baked crust and bake 20 minutes until golden.
Remove from oven and cool 30 minutes. Top with cherry filling, spreading to edges.
Enjoy!
Cut into squares and enjoy!
