Bison Burger with Cherry Aioli

Ingredients

  • Chukar® Cherry Aioli:
  • 1 cup mayonnaise
  • 1/3 cup Chukar® Cherry Pepper Jelly
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon Kosher salt
  • 1 tablespoon light brown sugar
  • Balsamic Red Onions:
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons light brown sugar
  • Kosher salt, to taste
  • Fresh ground black pepper, to taste
  • 1 teaspoon olive oil for coating sauté pan
  • 1 red onion, thinly sliced
  • Bison Burger:
  • 2 lbs. ground bison
  • 6 buns (ciabatta bread works well), spread with unsalted butter
  • 1/2 cup gorgonzola crumbles
  • 1/2 head butter lettuce

Directions

  1. Chukar® Cherry Aioli:
  2. Combine mayonnaise, Chukar® Cherry Pepper Jelly, chili powder, salt, and brown sugar. Mix until smooth.
  3. Place in small dish and refrigerate until use.
  4. Balsamic Red Onions:
  5. Mix balsamic vinegar, light brown sugar, a generous pinch of salt, and fresh ground black pepper (to taste).
  6. Brush sauté pan with olive oil and turn temperature to medium high.
  7. Add sliced red onions to pan and top with vinegar mixture.
  8. Stir and continue to cook until onions start to caramelize.
  9. Bison burgers:
  10. Form six burger patties and cook to desired temperature.
  11. Broil buttered buns until lightly toasted.
  12. Top burgers with cherry aioli, balsamic onions, gorgonzola crumbles, and lettuce.
  13. If you have leftover aioli, it makes a delicious dip for fries!
