Cherry Blue Cheese Salad

Ingredients

  • Chukar® Cherry Medley
  • ¼ cup Chukar® Columbia Valley Red Wine Blend
  • 2 bunches butter lettuce, chopped
  • 2 cups radicchio, chopped
  • 1 endive, leaves separated
  • ½ cucumber, peeled and thinly sliced
  • ½ cup red onion, thinly sliced
  • 2 tablespoons red wine vinegar
  • 1 ½ tablespoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • ¼ teaspoon fresh ground pepper
  • ¼ cup extra virgin olive oil
  • Kosher salt
  • ¾ cup blue cheese, crumbled

Directions

  1. In a medium bowl, combine 3 ounces of Chukar® Cherry Medley and ¼ cup Chukar® Columbia Valley Red Wine Blend. Set aside.
  2. Wash, dry, and chop the lettuce, radicchio, endive, cucumber, and red onion.
  3. In a bowl whip together the vinegar, lemon juice, Dijon mustard, honey, and pepper. Set aside.
  4. Drain dried cherries, place on paper towel, and set aside.
  5. In a large bowl, combine the vegetables and dried cherries. Add olive oil; toss to coat. Add savory dressing; lightly toss. Add Kosher salt to taste.
  6. Serve sprinkled with blue cheese crumbles.
