Cherry Blue Cheese Salad

Ingredients
- Chukar® Cherry Medley
- ¼ cup Chukar® Columbia Valley Red Wine Blend
- 2 bunches butter lettuce, chopped
- 2 cups radicchio, chopped
- 1 endive, leaves separated
- ½ cucumber, peeled and thinly sliced
- ½ cup red onion, thinly sliced
- 2 tablespoons red wine vinegar
- 1 ½ tablespoons fresh lemon juice
- 2 teaspoons Dijon mustard
- 2 teaspoons honey
- ¼ teaspoon fresh ground pepper
- ¼ cup extra virgin olive oil
- Kosher salt
- ¾ cup blue cheese, crumbled
Directions
- In a medium bowl, combine 3 ounces of Chukar® Cherry Medley and ¼ cup Chukar® Columbia Valley Red Wine Blend. Set aside.
- Wash, dry, and chop the lettuce, radicchio, endive, cucumber, and red onion.
- In a bowl whip together the vinegar, lemon juice, Dijon mustard, honey, and pepper. Set aside.
- Drain dried cherries, place on paper towel, and set aside.
- In a large bowl, combine the vegetables and dried cherries. Add olive oil; toss to coat. Add savory dressing; lightly toss. Add Kosher salt to taste.
- Serve sprinkled with blue cheese crumbles.
