Cherry Chipotle Chicken Skewers

Ingredients

  • 3 large organic chicken breasts
  • 1 jar Chukar® Cherry Chipotle Sauce
  • ½ cup plain yogurt
  • 2 fresh lemons (juiced), divided
  • 2 large portabella mushrooms
  • 1 sweet red pepper
  • Half a sweet onion
  • Half a fresh pineapple
  • Extra virgin olive oil
  • Kosher salt
  • Fresh ground pepper

Directions

  1. Note: For best results, marinate chicken breasts a minimum of 8 hours.
  2. Wash chicken breasts and pat dry. Pound chicken with a meat tenderizer.
  3. In a small bowl, mix together ⅓ cup Chukar® Cherry Chipotle Sauce, plain yogurt, and the juice from 1 lemon. Pour mixture into a quart-size ziplock bag. Add tenderized chicken breasts, seal, and refrigerate 8-24 hours.
  4. Preheat grill or smoker. If using wood skewers, soak in water for at least 30 minutes to keep them from burning.
  5. Wash mushrooms, pepper, and onion then pat dry. Cut into large 2-3-inch chunks. Sprinkle with juice from 1 lemon.
  6. Core, skin, and cut pineapple into 2-3-inch chunks.
  7. Remove chicken from marinade. Brush chicken breasts on both sides with olive oil and sprinkle with kosher salt and fresh ground pepper. Cut into 2-3 inch chunks and brush with Chukar® Cherry Chipotle Sauce.
  8. Fill each skewer with pieces of chicken, pineapple, red pepper, sweet onion, and mushrooms. Brush with Chukar® Cherry Chipotle Sauce.
  9. Place on grill or smoker. Cook for 10 minutes, turn over, and continue cooking until internal temperature of chicken reaches 155°F.
  10. Finish with a brush of Chukar® Cherry Chipotle Sauce across each skewer and serve.
