Cherry Chipotle Lamb Chops

Ingredients

  • 8 lamb chops, ½ inch thick
  • 2/3 cup Chukar® Cherry Chipotle Sauce
  • 5 carrots, sliced lengthwise: ¼-inch thick by 2 inches long
  • ½ sweet onion, cut into ¼-inch thick slices
  • 4 tablespoons extra virgin olive oil, plus extra for brushing on veggies
  • 1 teaspoon kosher or sea salt, plus extra for sprinkling on veggies
  • 1 teaspoon pepper, plus extra for sprinkling on veggies
  • 4 tablespoons fresh rosemary leaves
  • 2 garlic cloves, minced
  • ½ cup warmed Chukar® Cherry Pepper Jelly
  • Garnish: fresh mint sprig

Directions

  1. Place Chukar® Cherry Chipotle Sauce in saucepan and warm on low.
  2. Brush veggies with olive oil and sprinkle with salt and pepper.
  3. Turn the oven to broil. If using grill or smoker turn to high—425°F. Brush both sides of lamb with olive oil, combine salt, pepper, rosemary, and garlic. Press spice mixture onto the chops. Place vegetables on outside edges of pan and place chops in the center of pan.
  4. If using oven, cook chops for 5-6 minutes per side. If using grill or smoker, place on grill and cook until temperature reads 145°F (medium rare). Note: watch veggies throughout cooking time and remove from oven if they begin to burn.
  5. Transfer lamb to a platter and let rest for 5 minutes. Brush tops with warmed Chukar® Cherry Chipotle Sauce. Serve on individual plates with vegetables and a dollop of warmed Chukar® Cherry Pepper Jelly alongside.
