Cherry Turkey Muffin Appetizers

Ingredients
- 1 cup sugar
- 4 ounces unsalted butter
- 2 eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 cup Chukar® Tart Cherries
- Zest and juice of one orange
- 1/2 cup coarse sugar
- Chukar® Sweet Cherry Preserves
- 1 pound thinly sliced smoked turkey
Directions
- Preheat oven to 400° F.
- Cream sugar and butter, add eggs, and beat until fluffy.
- Sift together flour, baking soda, and salt.
- Add dry ingredients to egg mixture, alternating with buttermilk.
- Using food processor, chop Chukar® Tart Cherries with zest.
- Add to batter, spoon into buttered mini muffin tins, and bake 12 minutes or until golden.
- While still in pans, brush with orange juice and sprinkle with coarse sugar.
- Cool and remove.
- To assemble: slice muffin in half and make sandwich appetizers using Chukar® Sweet Cherry Preserves and turkey.
