Cherry Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 1 3/4 cups water
  • 1/2 cup Chukar® Rainer Cherries
  • 1/4 cup sesame seed oil
  • 3 scallions (white bulb plus 3 inches of the green stems), sliced
  • 1 cup Northwest Granny Smith apples, diced
  • 2-3 tablespoons fresh mint leaves, chopped
  • 2-3 tablespoons lemon zest
  • 2 chicken breasts sauteed and chopped (optional)
  • salt and pepper to taste

Directions

  1. Bring the quinoa and water to a boil in a large saucepan.
  2. When water begins to boil, reduce the heat, cover the pan, and simmer for 12 minutes. Check to ensure all liquid has been absorbed. Continue cooking if needed, up to 3 more minutes.
  3. Remove from heat and spread the quinoa on a baking sheet to cool.
  4. After the quinoa has cooled completely, combine it with the remaining ingredients in a salad bowl.
  5. Serve as a lunch or dinner salad.
