Cherry Quinoa Salad

Ingredients
- 1 cup quinoa
- 1 3/4 cups water
- 1/2 cup Chukar® Rainer Cherries
- 1/4 cup sesame seed oil
- 3 scallions (white bulb plus 3 inches of the green stems), sliced
- 1 cup Northwest Granny Smith apples, diced
- 2-3 tablespoons fresh mint leaves, chopped
- 2-3 tablespoons lemon zest
- 2 chicken breasts sauteed and chopped (optional)
- salt and pepper to taste
Directions
- Bring the quinoa and water to a boil in a large saucepan.
- When water begins to boil, reduce the heat, cover the pan, and simmer for 12 minutes. Check to ensure all liquid has been absorbed. Continue cooking if needed, up to 3 more minutes.
- Remove from heat and spread the quinoa on a baking sheet to cool.
- After the quinoa has cooled completely, combine it with the remaining ingredients in a salad bowl.
- Serve as a lunch or dinner salad.
