Chocolate Cherry Lava Cakes

Ingredients

  • Butter and cocoa powder (for ramekins)
  • 8 ounces bittersweet chocolate chips
  • 8 tablespoons butter
  • 2 eggs
  • 3 egg yolks
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup all-purpose flour
  • Chukar® Sour Cherry Pie Filling

Directions

  1. Preheat oven to 425° F
  2. Butter 6-8 ramekins and dust with a generous amount of cocoa powder. Tap to remove any excess.
  3. Melt chocolate chips and butter in a double boiler or in the microwave on low, stirring frequently. Stir the chocolate until warm to the touch, but not hot. Set aside.
  4. In a medium bowl, beat together eggs, egg yolks, sugar, vanilla, and salt until thick and smooth.
  5. Combine the chocolate mixture, the egg mixture, and the flour. Stir until just combined and divide between prepared ramekins.
  6. Spoon a tablespoon of Chukar® Sour Cherry Pie Filling onto the top of batter in each ramekin.
  7. Bake for 10-12 minutes until set on the outside but soft on the inside.
  8. Place a small plate over each ramekin. Flip so plate is down and ramekin is inverted on plate. Wait several seconds for cake to settle and then carefully remove the ramekin.
  9. Serve warm with additional Chukar® Sour Cherry Pie Filling drizzled over the top.
