All Natural Maraschino & Chocolate Chunk Ice Cream

  1. Add heavy cream, half-and-half, sugar, and juice from Chukar® Maraschino Cherries to a large saucepan over medium heat. Bring to a simmer, then remove from heat.
  2. Add egg yolks to a separate bowl and beat lightly. Ladle 1 cup of hot cream mixture 2 tablespoons at a time into the egg yolks, stirring with each addition. Now add the hot yolk mixture back to the saucepan with the remaining hot cream in it. Cook on low, stirring constantly, until the mixture reaches 170°F.
  3. Pour the mixture into a container and refrigerate until chilled, about 6 hours.
  4. Remove stems from maraschino cherries. Coarsely chop maraschinos, then stir into the cold custard with almond extract and bittersweet chocolate. Pour into ice cream maker and freeze according to appliance instructions.
