Salted Chocolate Tart Cherry Cookies

Ingredients

  • 1 cup old-fashioned rolled oats
  • 3 cups all-purpose flour
  • 1 ¾ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 ¼ teaspoons kosher salt
  • 1 ½ cups unsalted butter, softened
  • 1 ¾ cups light brown sugar, packed
  • 1 ¼ cups granulated sugar
  • 3 eggs
  • 1 ½ teaspoons vanilla extract
  • 3 ½ cups bittersweet chocolate chunks (do not use chocolate chips)
  • 1 bag Chukar® Tart Cherries, lightly sweetened
  • Coarse sea salt

Directions

  1. Use a food processor to grind oats to a rough flour consistency.
  2. Mix all-purpose flour, baking powder, and baking soda in a large bowl. Stir in ground oats and kosher salt.
  3. In a separate bowl, use an electric mixer to beat the butter and sugars at medium speed for three minutes. Stop to scrape down the bowl. Mixture should be light and fluffy.
  4. Add the eggs one at a time, then the vanilla extract. Stop to scrape down the bowl.
  5. On low speed, slowly add the oat/flour mixture to the butter mixture to form a soft dough. Remove from mixer. Fold in chocolate and cherries by hand.
  6. Roll dough into 24 separate balls. Cover and refrigerate overnight.
  7. Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone liners.
  8. Place cookie dough balls on baking sheets, spaced 2 inches apart. Use your hand to slightly flatten each ball. Sprinkle each disk with coarse sea salt. Bake for 8 to 9 minutes, until golden brown around the edges. Cool for 5 minutes, then transfer to wire racks to cool completely.
  9. Repeat with remaining dough.
