Salted Chocolate Tart Cherry Cookies

Ingredients
- 1 cup old-fashioned rolled oats
- 3 cups all-purpose flour
- 1 ¾ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 ¼ teaspoons kosher salt
- 1 ½ cups unsalted butter, softened
- 1 ¾ cups light brown sugar, packed
- 1 ¼ cups granulated sugar
- 3 eggs
- 1 ½ teaspoons vanilla extract
- 3 ½ cups bittersweet chocolate chunks (do not use chocolate chips)
- 1 bag Chukar® Tart Cherries, lightly sweetened
- Coarse sea salt
Directions
- Use a food processor to grind oats to a rough flour consistency.
- Mix all-purpose flour, baking powder, and baking soda in a large bowl. Stir in ground oats and kosher salt.
- In a separate bowl, use an electric mixer to beat the butter and sugars at medium speed for three minutes. Stop to scrape down the bowl. Mixture should be light and fluffy.
- Add the eggs one at a time, then the vanilla extract. Stop to scrape down the bowl.
- On low speed, slowly add the oat/flour mixture to the butter mixture to form a soft dough. Remove from mixer. Fold in chocolate and cherries by hand.
- Roll dough into 24 separate balls. Cover and refrigerate overnight.
- Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone liners.
- Place cookie dough balls on baking sheets, spaced 2 inches apart. Use your hand to slightly flatten each ball. Sprinkle each disk with coarse sea salt. Bake for 8 to 9 minutes, until golden brown around the edges. Cool for 5 minutes, then transfer to wire racks to cool completely.
- Repeat with remaining dough.
